Apparently it was a demonstration of capability for the 737.

It was, and it cost Boeing a little to restore the field after they used it. They tested a ski that they later developed into part of the gravel kit for the -200.

Rough field operation was a Boeing 727 capability, maybe they wanted to make the 737 more attractive to Third World and military customers by proving that it had some such potential as well.
